Free-range eggs unavailable in Britain from Monday

Hens have been indoors for months because of avian flu and their eggs must now be differently labelled

Consumers will no longer be able to buy free-range eggs in the UK from Monday, with birds not having been allowed outdoors since November due to fears of avian flu outbreaks.

Eggs sold in shops will have to carry a sticker or label saying they are in fact “barn eggs”, the name given to eggs produced by hens permanently housed indoors.

Can you bake with Easter egg chocolate? Sure you can. After getting my hands on a variety of Easter eggs this year (dark chocolate, caramelised white chocolate, orange-flavoured, nougat-filled mini eggs, the ones with pretzels stuck all over them … ), I found a place for them all: melted and turned into something else. For these recipes, I encourage you to use up whatever chocolate you have. Easter eggs are typically sweetened (even the dark varieties), so taste them beforehand (as I’m sure you have already) and judge if you need to add any salt, for example.

Billions of unwanted male chicks are slaughtered by the farming industry. Now a startup claims to have found a surprising solution to the problem

The eggs we eat have a hidden cost. About 7bn male chicks are killed worldwide every year to produce them. Farmers need to replenish their supply of egg-laying hens but, by nature, half the chicks that hatch are male and growing them for meat is uneconomic – that industry uses faster growing breeds. In many countries they are tossed into shredding machines, although in the UK they are gassed.

But what if those male chicks could instead hatch out as functional females, able to grow into egg-laying birds? That’s the vision of Israeli startup Soos Technology. Founded in 2017, the company, which has received $3.3m in investment and prize winnings, wants to make commercial hatcheries kinder and more economic by changing the effective sex of poultry embryos as they develop.

New Zealand is in the grip of an egg shortage as the industry undergoes a massive period of disruption while it transitions to free-range farming.

The shortage has also been caused by an increased appetite for eggs, with New Zealanders consuming 230 eggs per person last year, compared with 200 per person a decade ago.
