An Italian academic has caused more than a stir after saying the recipe for carbonara is American and the only place in the world to find bona fide parmesan cheese nowadays is Wisconsin.

Alberto Grandi, a professor of food history at the University of Parma, made the remarks in an interview with the Financial Times. He also claimed tiramisu and panettone were relatively recent inventions and that most Italians had not even heard of pizza before the 1950s.

Opening nightmare: launching a restaurant into a world stricken by Covid and Brexit

The past two years have been the hardest ever for restaurants. Amid critical shortages of staff, food supplies and even customers, can a new venture from the man behind Polpo survive?


Every morning last autumn, as he took the short walk from Farringdon station in central London to his new restaurant, Russell Norman came face to face with a ghost. The pandemic had hit the hospitality sector hard, and this stretch of takeaway outfits and dine-in burger chains was no exception. A Byron, a Coco di Mama, an Itsu – all long gone, doors locked, interiors dark. And then, just before the final right turn, the one that really hurt, the words on its signage removed but the outline unmistakable: Polpo.

The Venetian-inspired restaurant, which took its name from the Italian for “octopus”, had been a breakout success for Norman in the early 2010s. With its small plates, no-reservations policy and stripped-down interiors, the original Soho site had been credited with reinventing casual dining after the Great Recession. But then, like so many brands that emerged during the same period, it started to expand: taking on investors, extending tentacles across the UK, and then collapsing in instalments from 2016 onwards. Most of its sites were forced to close in the context of a broader casual dining crunch, as the cost of running a restaurant rose and the number of customers fell. These days, just two Polpos survive, in Soho and in Chelsea, west London, under the management of Norman’s former business partner Richard Beatty. Norman’s own departure from the project was finalised in June 2020.

Getting your homework marked by Stanley Tucci is terrifying. Not because he is scary. On the contrary. He has impeccable, courtly manners. It’s terrifying because of what is at stake. I prise off the lid to the plastic box and turn its contents towards him, shyly. Tucci plucks a single chilled meatball from the one kilo throng, each the size of a large marble, and pops it into his mouth. He nods slowly, then smiles. “Perfetto,” he says, simply. Thank Christ for that. The meatballs, made to his own detailed recipe, are a key part of a grandiose cooking adventure we are embarking upon today, here in his kitchen. They need to be right.

In 1996, Tucci introduced the world to one of his family’s great culinary traditions, courtesy of the movie Big Night, which he starred in, co-wrote and co-directed. In the film, set in 1950s America, Tucci plays a recent Italian immigrant who, along with his chef brother, runs a struggling Italian restaurant on the shore not far from New York City. To raise its profile, they decide to stage a special dinner which, they have been told, will be attended by the great American-Italian singing star Louis Prima. The centrepiece of this magnificent, delirious feast will be a timpano.

Claudia Roden: ‘What do I want from life now? Having people around my table’

Claudia Roden wasn’t sure that anyone would be interested in her writing another cookbook. “I kept telling my agent, ‘Nobody will want a book from an octogenarian!’” she says on a video call. Roden has just turned 85 to be exact, and she knew she wouldn’t have the energy for her usual process: travelling across countries and regions, painstakingly collecting recipes and stories from food lovers and chefs. But she is still a formidable home cook and relentless entertainer – for friends, for her children, now in their 50s and 60s, and their children – and, with a nudge from her agent, Roden wondered if there might be something in that.

“I was thinking, ‘What do I want from my life now?’” she says. “And I found that having people for dinner was what I enjoyed more than going to the theatre or to a concert. To have them just around my kitchen table was my idea and it will be what we cook. So I cooked hundreds of dishes and when we thought, ‘This is marvellous,’ it went in the book. I didn’t plan it to be Mediterranean. But it just was Mediterranean. Because that’s where I went.”

One of our many neighbours spends a fair bit of his day just outside the main gate of the building, or on the nearby corner of the piazza. He is 84, although he seems younger, and is always immaculately dressed: his trouser pleats sharp, his shirt collar firm, his suede jacket brushed in the right direction.

On the corner, he is part of a group of men – most of whom were born in one of the four buildings that box the piazza – who chat in the sunshine. At the gate, he is often waiting for his wife, also in her mid-eighties (and in my opinion the best dressed signora in our neighbourhood). It is a good day if, when coming round the corner from my part of the building, I coincide with her coming down the stairs from hers, so we can walk to the gate together, and therefore meet her husband, with his performed exasperation and obvious pride. Meeting her is rare, though. Usually I see only him, waiting, and he always asks, “Vai a spasso?” (“Going for a saunter?”), and I always say yes, even when I am rushing to the optician. And because trips these days out are short and masked, I might also see him on my way back, still waiting. And if it is lunchtime, which it often is, he always says the same thing. “Vai a cucinare la pasta?” (“Going to cook pasta?”), and I always reply yes, because I probably am, again.

Armando al Pantheon, a lively, family-run trattoria in the heart of Rome, counts the architect Renzo Piano among its illustrious customers. And there is no way that owner and chef Claudio Gargioli, is going to offend his sensibilities – and those of other regulars – with plexiglass.

His father, who opened the restaurant a stone’s throw away from the majestic Pantheon in 1961, would turn in his grave at such a notion, he said. “It could work as a barrier at the till, but on the table it’s not only ugly, but an insult,” Gargioli told the Observer.
