Let’s travel again (at least in our kitchens): to south America, for arepas stuffed with feta, chilli and avocado, and then to west Africa for deep-fried plantain fritters

One of the many joys of street food is that you can move on from one country to another as soon as your tummy allows. Last week, we were in Mauritius and Brazil, snacking on jackfruit kati rolls and prawn pasties, and, having had seven days to digest those, I hope you’re all up for round two today. This time, we’re off to Ghana and Venezuela. As with so much street food, these dishes are best eaten by hand, standing up outside next to people you’ve just met. I may not be able to conjure up new friends, especially in these times, but I can supply recipes that will transport you to far-flung places.

One of our many neighbours spends a fair bit of his day just outside the main gate of the building, or on the nearby corner of the piazza. He is 84, although he seems younger, and is always immaculately dressed: his trouser pleats sharp, his shirt collar firm, his suede jacket brushed in the right direction.

On the corner, he is part of a group of men – most of whom were born in one of the four buildings that box the piazza – who chat in the sunshine. At the gate, he is often waiting for his wife, also in her mid-eighties (and in my opinion the best dressed signora in our neighbourhood). It is a good day if, when coming round the corner from my part of the building, I coincide with her coming down the stairs from hers, so we can walk to the gate together, and therefore meet her husband, with his performed exasperation and obvious pride. Meeting her is rare, though. Usually I see only him, waiting, and he always asks, “Vai a spasso?” (“Going for a saunter?”), and I always say yes, even when I am rushing to the optician. And because trips these days out are short and masked, I might also see him on my way back, still waiting. And if it is lunchtime, which it often is, he always says the same thing. “Vai a cucinare la pasta?” (“Going to cook pasta?”), and I always reply yes, because I probably am, again.

Barnier ‘flabbergasted’ at UK attempt to reopen Brexit specialty food debate

Bloc sources say Britain is trying to water down EU geographical protections

The UK government has renewed its attempt to reopen the chapter of the Brexit divorce treaty protecting specialty food and drink, such as Parma ham, roquefort cheese and champagne, in a move that left the EU chief negotiator, Michel Barnier, “a little bit flabbergasted”.

The British proposal on protected status for food and drink was included in a draft free-trade agreement handed to Barnier by his opposite number, David Frost, last week, according to two EU sources.

Halloumi hell: how will we survive the cheese crisis?

It’s one of Britain’s best-loved imports, but now supplies of the ‘squeaky’ Cypriot cheese are running perilously low

Gently, I pull my halloumi from its loose plastic wrapping. I do this delicately, since, like funfair goldfish or those waterproof watches you can buy at the airport, halloumi comes sealed in a bag of liquid, as if the poor cheese was in a rush to reach you and has lost a good part of its weight in sweat. I slice the spongy, cuboid form and let its segments slap and sizzle into the pan, where its edges turn from brilliant, Tipp-Ex white to a golden yellow. The rectangles don’t melt so much as separate at each end, until each resembles something like a chubby letter H, or an artist’s representation of a chromosome.

Halloumi has been a consistent part of my diet for most of the nine years I’ve been in London. Its appeal is in its zesty tang and its odd, formless texture. That tooth-satisfying squish and give that makes it readily applicable to so many methods of cooking; barbecued in strips, cooked with a salad, or positioned as a meat substitute wherever needed.
